Recipe: Baked Sago Pudding

With the weather becoming decidedly colder and a cold front expected in Cape Town this week, a warm winter pudding always works very well in my home.

This recipe is quick and easy to make either for Sunday lunch dessert or a quick pudding after work.

Ingredients
1 cup sago soaked in cold water for at least an hour
750ml milk
1/4 cup sugar
pinch salt
2 eggs
half tspn vanila essence
Stick cinnamon
Cinnamon or nutmeg to sprinkle

Method
Drain sago, rinse and drain again
Pour milk into saucepan with a few sticks of cinnamon. Heat until boiling.
Turn down heat to low
Add sugar and salt
Stir in sago until thickened and sago is transparent
(If too thick, add more milk)
Remove from heat and beat in 2 eggs, one at a time.
Add in vanila essence
Pour mixture into greased oven proof bowl
Sprinkle nutmeg or cinnamon over mixture and bake on 180 degrees in a pre-heated oven for about 30 minutes or until brown on top.

    Hi Abigail,

    After craving mum’s sago pudding I asked my wife to do a search for an easy recipe and we were directed to your website.

    My wife ended up trying the recipe and it came close (to mum’s) but no cigar. However, since mum’s on the other side of the world, your recipe will be getting a regular workout. Besides, maybe with a bit of practice my wife can produce a replica of mum’s perfect pudding.

    I am a pensioner at home and my wife is still working.
    which means I do the cooking. Since it is so cold,I am going to impress her now with a nice hot pudding. Thanks for a nice recipe

    Thank you for publishing this recipe. I can’t find sago in the country I am in at the moment, so bought a packet on my recent trip home to SA. I can’t wait to try out your recipe, as it sounds very much like the way my Mom used to make sago pudding.
